This Little Piggy Mobile Catering

Every other Sunday, a farmer's market is held at the Port Moody Rec Centre. On one visit to the market, This Little Piggy was serving up pancakes. Needing a lunch after church and knowing my weakness for pancakes, I ordered one for my meal. I don't want to be to harsh, but their food does not match up to their prices whatsoever.

I ordered their market special, which was pancakes with apple sauce. Upon ordering, they were actually unsure if they still had any pancakes left to sell. But evidently, they managed to whip up some for me. These pancakes were nothing to write home about; flat, small, not fluffy. Even the compote didn't have any wow factor. This was beyond disappointing, my homemade pancakes are a billion times better. Strangely enough, the little dollop of berry jam (I don't remember what type of berry it was. Some like a blackberry but slightly harder and chewier) was the highlight of this plate. Condiments like syrup, honey, and an assortment of jams were provided by the truck. I enjoyed the jam most (sad huh?).

My brother ordered one of their pulled pork sandwiches for his lunch. This was also a disappointment. The bun was hard, the pork was dry, and we could've used more coleslaw. The chips on the side are rather random and doesn't accompany the sandwich very well. Eight dollars is a lot of money for this measly sandwich. 

It was a really chilly day that Sunday afternoon so the food got cold really quickly, which I acknowledge would affect the quality of the food.

I believe This Little Piggy was one of the first food trucks in Coquitlam. Unfortunately, their overpriced food did not impress me at all. I actually felt like I had wasted $13 of my money after this meal. I would not recommend this food truck to anyone nor will I be a returning customer.

The Griddle Cafe

Our first night at a hotel near LAX Airport was supposed to include a continental breakfast. But it was the saddest breakfast of any sort I had ever seen. A few mini cinnamon rolls and coffee-flavoured water. Not even cold water for me to fill my water bottle up with. So, after taking some touristy photos in Beverly Hills, my family was ready to get some real breakfast. The Griddle Cafe serves just that.

When I was researching for restaurants in Los Angeles, The Griddle Cafe quickly made it to my list. Humongous pancakes in eighteen different flavours? Count me in! For those that have read my Honolulu post probably know I love pancakes.

We arrived on a Tuesday at around 11:30am. Before going to find street parking, my dad dropped my mom and I off in front of the restaurant. There were a lot of people standing standing in the vicinity, of which all were people waiting for a table. I was so worried my mom would say "the wait is too long" and make us find another food source. My imaginary beads of worry sweat were wiped away when I put my name on the waitlist and was told there was a 15 minute wait. I was a bit skeptical at first, because there were at least 15 groups ahead of me. Where they using the Chinese "tell them the wait is shorter so they'll stay and we can get their money" tactic? Nope. The steady wave of people coming out of the restaurant and quick service made our wait, maybe even less than, 15 minutes. Hurrah!

Their red velvet pancakes are very famous, however there is only one pancake per order, compared to three for all other pancakes. Since we would rather not have to go through the tedious process to decide what other food to order, I chose the Barry Yellow pancakes. "Raspberry and lemon folded into our buttermilk batter" is how the menu describes it. I was blown away when it arrived at our table. Each pancake could easily be 12 inches in diametre. And there's three of them! Eating one quarter of this plate is like eating a regular serving of pancakes. The staff are very efficient and provide extra plates with all pancakes, because realistically, everyone will have to share this...right? The massive pancakes here are dirt cheap at $10 to $12.

A Blackberry Breakfast of Pancakes and Muffins

August, the month for blackberries. These delicate, plump berries that resemble raspberries aren't around for long. Their expensive price tag at the supermarket make it a 'once in a while' special treat worth splurging on. The fresh flavours of blackberries + lemon + ricotta create wonderful light summer treats. I have incorporated this combination in two recipes: pancakes and muffins.

Last week, I made some Blueberry Lemon Ricotta Pancakes. I loved those light-as-air pancakes so much I had no troubles deciding on what to do with the leftover ricotta cheese. More pancakes! (If you've read my Hawaii post, you may know I have a weakness for pancakes) Blackberries work just as well with lemon and ricotta and best enjoyed in the form of these fluffy pancakes. Using the pancake batter recipe linked above, but just replacing the blueberries with blackberries in the sauce.

For the sake of trying a new recipes some of the ricotta went towards a batch of muffins. Same three flavours, but in a completely different form.

Blueberry Lemon Ricotta Pancakes with Simple Blueberry Sauce

These will be the fluffiest pancakes you will ever put into your mouth. They are cloud-like and will take you on a field trip to heaven. Really.

My family has been consuming blueberries at record amounts; the 40lbs we picked at Krause Berry Farms just a week ago has pretty much been consumed as is. Being a cook, I wanted to make something with fresh blueberries, as it is very rare I have them at hand to use in a recipe. Frozen berries turn my baking into disasters...it's very unfortunate. So I saved a small box of blueberries to create something magnificent. And I managed to reach my goal.

I remember Peanut Crumpet telling me about her mom's uber fluffy ricotta pancakes. With that inspiration in mind, I searched the Internet for a blueberry version. Blueberry + lemon + ricotta appealed to me the most; the light and fresh flavours were perfect for a summer brunch. My mouth started salivating as I scrolled through all the photos, I was so eager to make them!

A Day of Coconut Bliss

Exam time has come for us students, which means study time occupies (or should occupy) the majority of our time and effort. Seven tests coming up in the next two weeks for Coconut Crumpet, such joy. I'm not even sure my brain has the capacity to hold four full courses worth of information at one time. And to add to my troubles, I have been feeling sick for two days now. Congested nose, headaches, fatigue... It seems like viruses and bacteria happen to only love me during test times.

To relieve some of this stress and pressure, I decided to allow myself to enjoy a fancy Sunday morning breakfast. Surely I can use some time to appreciate the most important meal of the day before studying for another few hours. After watching Leaftv's drool-enducing video, my mind has been set to make these pancakes. The time has come for Coconut Crumpet to do so. Although my pancake-making skills are still lacking, I thoroughly enjoyed my coconut pancakes. Get the recipe at A Cozy Kitchen and make these filling pancakes! Using my silver dollar pancake pan, half the recipe yielded me exactly 4 pancakes. My new found way to eat my pancakes is with a generous dollop of yogurt and a drizzle of honey. In this case, with the best coconut yogurt I've encountered so far, Liberte's coconut yogurt. Yes it's fruit bottom (meaning lots of sugar) and almost 9% milk fat, but everything in moderation is okay~

So far my weekend has consisted of eating, or studying. A pile of physics review, social studies vocabulary and 410 Mandarin vocabulary words sit on my table longing for my attention. Since studying requires a lot of brainpower, and the majority of calories are burned to function the brain, it's important to fuel the body when doing some serious studying! When my tummy started asking for food again, I went to grab my newly bought tub of Coconut Bliss. You can read about my first experience with this genius masterpiece here. Eating this just alleviates some stress and brings me to bliss~ I can't wait to eat more of it over the course of the upcoming summer season. That is, if I live to see the end of June..

Sunday is the day that passes by much too quickly; church in the morning then afternoon and evening zooms by. Before I can fully recover, is Monday again. A funny quote I saw a while back said "Why is Monday so far from Friday and Friday so near to Monday?" I wholeheartedly agree. To some, summer is right around the corner. For me, summer is so distant, it's almost unattainable. To help me get through busy times, I tend treat my tongue to some of my favourite foods, like coconut. How do you keep yourself motivated during a hard time?
