A Long Weekend of Birthday Baking

Gaaaah, this post is about one month late but I still wanted to share three recipes I had tested out during the Canadian Thanksgiving weekend. Over that long weekend, I baked goodies as presents to three birthday girls: a childhood friend, a church friend, and my beloved grandmother. Without further ado, some eye-candy for you to indulge in.

Building the Vegan Chocolate Pumpkin Pie Layer Cake
Once I confirmed that my childhood friend, Tiff, was a fellow fan of pumpkin, I decided to go all out for her birthday cake. We were celebrating her 'entrance into adulthood' with a 'baby turkey' (aka Costco rotisserie chicken) dinner, Disney movies, and a sleepover. Sounding epic? Just wait until you hear about this Vegan Chocolate Pumpkin Pie Layer Cake I made her. Alternating layers of chocolate pumpkin cake and crustless pumpkin pie, glued together with whipped coconut cream. I could eat the whole cake and feel [almost] guiltless. I just got some teasing from my best friend, looking down on the cake just because I mentioned it's vegan. Whoa whoa now, don't hate on vegan food! Vegan food can be de-lish, as proven by this cake.

Completed Vegan Chocolate Pumpkin Pie Layer Cake
It was my first time using and eating whipped coconut cream, oh my goodness, Coconut Crumpet went on a vacation to heaven. I stuck a can of Rooster Brand Gold Label Coconut Milk into the fridge overnight for the vegan whipped cream. I highly recommend using this particular coconut milk because of its high, high, high fat content. It's super rich, thick, and coconutty. All the coconut whipped cream recipes I've seen online use the 'full fat' cans of coconut milk, which yield about half a can of whip-able coconut cream. The Gold Label Coconut Milk yields more than 3/4 can of coconut cream!! It was enough to frost this loaf-sized cake.

As for the actual cake part of the cake, I used a pumpkin chocolate brownie recipe and adapted this crustless pumpkin pie recipe. While the brownie turned out fine, I took my Rachel-ifying a little too far for the pumpkin pie layer. It was bubbling in the oven like a cauldron and rose about five times the height that it should have, then I almost burnt it, and all that height collapsed as it cooled and some batter stuck to the sides of my loaf pan. Thankfully, the taste was fine and it would be ready to become a cake with a bit of a trim.

On the same day as I decorated this cake, I baked up two more birthday presents. Some Cranberry Orange Ricotta Muffins for my grandma and Soft Peanut Butter Chocolate Chip Cookies for a church friend, who is a lover of peanut butter and chocolate.

Cranberry Orange Ricotta Muffins
These muffins follow the same recipe as this Blackberry Lemon Ricotta Muffins I already have on the blog. This ricotta muffin recipe yields the fluffiest muffins ever; it is a must-try! I replaced the blackberries with cranberries, lemon zest and juice with that of an orange, and sprinkled the tops with turbinado sugar before baking. The raw sugar gives a beautiful sparkle and delicious crunch to the finished muffins. It's just unfortunate the the sugar will dissolve by the next day...so no more crunch :(

Soft Baked Peanut Butter Cookies
And finally, a batch of soft-baked peanut butter cookies, packed with chocolate chips and peanut butter chips of course. These were soooooooooooo good~~ Totally my type of cookie: soft, thick, chewy, peanut-buttery... I'm drooling again. You probably want to know what recipe I used right? Well head over to Sally's Baking Addiction; she has a plethora of cookie recipes with a good mix of healthy recipes too!

I altered a few ingredients as softened (not melted!) coconut oil replaced the butter and Reece's peanut butter chips and chocolate chips instead of M&M's. The base of the cookie can be made vegan with the use of coconut oil.

Soft Baked Peanut Butter Cookies
Even though many peanut butter cookie recipes recommend sticking to the regular creamy peanut butter stuff that is laden with sugar, I went ahead and used my natural peanut butter. The trick is to make sure the separated oil is very thoroughly re-incorporated (stir it every time you open the jar) and the jar is kept in the refrigerator. By keeping the natural peanut butter cool, the texture becomes creamy instead of runny.

I forgot to press down on the cookie dough before baking, which is why my cookies look a lot smaller and fatter. That isn't really bad at all as there will just be more soft cookie inside to enjoy!

Well, I hope that these little posts of "what I've been baking" is interesting. Halloween is over and now we're charging full force into Christmas. While I had a fun Halloween dressing up as a minion (I have a slight obsession with those yellow pill-shaped creatures), Christmas is the most wonderful time of the year. No arguing. I cannot wait for Christmas and all the festive deliciousness that happens during December; hopefully I'll be able to post about my successful recipes! Pumpkin pie anyone? The perfect Vegan Pie Crust can be made by following my recipe here. I'm still working on a perfect pumpkin pie filling so please check back soon! The Crumpets will try our best to post as often as we can between our busy schooling ;) We have lots to accomplish before we wander into the scarier-than-Halloween land of university...dundunDUNNNN..

Butternut Squash Lasagna Roll-Ups with Corn Puree & Barlett Pears

Autumn brings about squash and gourds season! I began my butternut squash marathon by using a leftover sheet of fresh lasagna pasta and created these beautiful pinwheels. Think of it like a hot and cooked version of a lunch wrap. They are so easy to put together and the possibilities of filling combinations are endless. Plus, these roll-ups look super impressive, even if I must say so myself.

Butternut Squash Lasagna Roll-Ups with Corn Puree & Barlett Pears
Inspiration for this dish came from this month's issue of Fresh Juice magazine, Super-Green Pinwheels with Minted Pea Puree. I really love reading this relatively new-on-the-market magazine by President's Choice. Especially since my mom gets every issue free in the mail because she holds their credit card. Anyways, how did I do with recreating this? Does it look similar? :D

The flavours are simple and speak for themselves. Roasting the squash gives it the warm and cozy feeling, the ricotta provides that creaminess we all know in a lasagna and the basil is there for a pungent yet fresh punch of flavour. All the flavours blend together and melts in your mouth.

I chose to experiment with slices of squash in the roll-ups. Mainly because it would cook faster in the oven; I can get rather impatient on a hungry stomach. The result was a little drier than a normal lasagna is, missing the sauce and loads of cheese. In Fresh Juice's version, they pair their lasagna rolls with a pea puree. Using that idea, I made a simple 'sauce' of pureed cooked corn kernels (and cheated by using the canned variety) to add some necessary moisture. Very basic but did the job of adding moisture, flavour, and decoration well. Maybe next time I will puree the squash to fill the pasta; this will also help retain some moisture.

This entree (or potential appetizer?) is borderline crossing into the sweet territory. Butternut squash, corn, and barlett pear can all be used in sweet recipes. But being someone with a sweet-tooth, I have no problem with my dinner being a little sweeter than usual ;)

Butternut Squash Lasagna Roll-Ups with Corn Puree & Barlett Pears

The colours on my plate look more summer-y than fall, but that just means this recipe can be altered according to what ingredients are fresh and in season. Switch up the fillings and the herbs, there are bound to be tons of delicious combinations out there!

Butternut Squash Lasagna Roll-Ups with Corn Puree & Barlett Pears
Inspired by Fresh Juice
Serves 1

Ingredients
  • 1 sheet of fresh lasagna
  • about ⅛ of a small butternut squash
  • 1 tsp coconut oil, melted
  • Pink Himalayan sea salt & freshly ground pepper, to taste
  • ½ fresh barlett pear
  • ½ cup of corn niblets, canned, fresh or frozen
  • ¼ cup ricotta cheese (low fat is okay)
  • about 6 basil leaves, chiffonaded + mini ones for garnish
Directions
  1. Preheat oven to 400°F. Grease or line a baking sheet with parchment paper.
  2. Peel butternut squash skin off with a vegetable peeler. De-seed and cut into paper-thin slices.
  3. Toss squash slices with melted coconut oil and season with salt and pepper. Spread squash in a single layer (or as best you can) onto prepared baking sheet and roast until tender, 10 to 15 minutes. Avoid over-baking and turning them into chips!
  4. Meanwhile, in a flat frying pan, bring about 1 inch of water to a boil. Cook lasagna sheet for 2 to 3 minutes. Drain and place on an oiled or parchment paper-lined baking sheet.
  5. In a small bowl or custard cup, mix together ricotta and chiffonaded basil. Spread onto cooked lasagna sheet, leaving a 3 inch boarder on one of the shorter ends. This will help seal the pasta later.
  6. Arrange roasted squash slices over ricotta cheese and roll lasagna up tightly (unlike me) like a sushi roll. Cut into 6 or 8 equal pieces with a sharp knife.
  7. Place lasagna roll-ups cut-side up on the same baking sheet and bake at the same temperature (400°F) for 20 minutes.
  8. While roll-ups are baking, slice pear into paper-thin pieces and arrange onto serving plate. The left-over slices of squash can be used to decorate too!
  9. In a food chopper or processor, puree cooked corn niblets until mostly smooth. Spoon over pear, or use for desired decoration.
  10. Once finished, plate baked lasagna roll-ups and garnish with a few whole corn niblets and some mini basil leaves.

The Calm Before the Storm: A Snippet of Coconut Crumpet's Life

The clouds move in and summer moves out. It's the Sunday summer leaves Vancouver, wind, rain, lightening and thunder take its place. Back to living in Raincouver...

Honey Roasted Mission Figs
To contrast that gloomy mess outdoors, I discovered a new favourite treat. I've documented my love of ricotta in pancakes and muffins, and my first box of mission figs. Combine the two in an open-faced sandwich, add a drizzle of honey and there you have it, the most classy breakfast ever. Here are some more detailed instructions:

Ricotta, Honey, and Fig Tartine
To roast figs, place them cut-side up on a baking dish, drizzle with honey, add a few cracks of freshly ground pepper and bake at 400˚F for about 15 minutes. Toast a slice of bread until brown. Spread ricotta cheese over one side, taking care to spread all the way to the edges. Drizzle with honey (or mix the honey in with the ricotta before spreading on bread) and top with roasted figs. Bake at around 400˚F until ricotta cheese is browned (about 15 minutes?). Don't be impatient like me and take it out the second a browning spot of ricotta appears. Good things come to those who wait ;)

Whole Wheat Ricotta Peach Scones
After a hectic morning of teaching Sunday school to the cutest grade ones and twos, and a roll of kimbap for lunch, I kept myself occupied in the afternoon by baking up a batch of scones. Whole wheat ricotta peach scones. It's the first batch of scones I've made at home where cutting the dough into shapes was possible. For some strange reason, whenever I make scones at home (yes, it only happens at home), the dough becomes so runny I am forced to make drop scones instead. They don't taste bad at all, but it's frustrating when everyone else can cut their dough into different shapes and mine always end up being circular mounds. I am not super content with the outcome of the scones; they were a bit too greasy and not sweet at all. I'll do a few tweaks to improve the recipe before I post it. For those that are itching to try these scones themselves, I followed the recipe from Smitten Kitchen but used frozen coconut oil instead of butter, milk instead of heavy cream, and added some meyer lemon zest (makes all the difference). I think an egg wash would really benefit the appearance of these scones and some vanilla or almond extract for an extra flavour boost. The glisten you see on my scones is from a drizzle of honey I added at the end and attempted to caramelize under the broiler.

Before the thunderstorm, and where I do my food photography
So this is how Coconut Crumpet usually spends her weekends, that is when there isn't any homework to be done. We'll be watching the rain fall for the next half a year... Although the chilly season brings bad weather, I am looking forward to eating mooncakes for the Mid-Autumn Festival (it's actually before the Autumn Equinox...) this week and pulling out those large cans of pumpkin puree I've been storing in the basement since Christmas. I have a perfected pumpkin loaf to share with you all. It's one of my faaaaavourites! Time to dig out my rain boots and that black peacoat I'm known to wear all autumn and winter long.

Strawberry Swirled Mini Ricotta Cheesecakes

Here comes another birthday post! This time for my very best friend Az, whom was featured with the glorious chicken wings at Phnom Pehn. Strawberries and cheesecake are two of her favourite foods, so that's what I planned as her birthday cake. But with a twist!

Strawberry Swirled Mini Ricotta Cheesecakes

Unlike my Berry Swirl Cheesecake or Mocha Cheesecake Squares, there are two types of cheeses in this cake, cream cheese and ricotta. The addition of ricotta creates a texture that is much lighter and fluffier. On the cheesiness scale, I'd place these mini cheesecakes between a New York cheesecake and a Japanese cheesecake, but closer to the Japanese one. It's not as spongy as it's Japanese relative, just a bit cheesier.  Perhaps my cheesecakes like puns... (Okay, that was a really bad joke. Just for you, Peanut Crumpet =___=;;)

Fresh Summer Strawberries
The simple strawberry sauce can easily be substituted by almost any other flavours. Other fruits such as blackberries would work beautifully (check out my blackberry + ricotta recipe) or richer flavours like peanut butter or chocolate could be used too! To do so, reserve a bit of cheesecake batter to mix in a generous scoopful of peanut butter, cocoa powder, or whatever flavour your heart desires. To create the heart-shaped swirls, simply dot a few blobs of sauce over the raw batter and drag a toothpick through the centre depending on which direction you wish the hearts to go. A simple yet impressive design!

More fresh strawberries!
To amp up the aroma of these individual cheesecakes, I toasted some almonds to whiz in with the crust. Hiding it in the crust is a discrete way to add another element to the dessert; my mom suddenly asked me "what did you put in the crust?" She definitely knew it wasn't the basic graham cracker crust, but couldn't quite put her finger on what was different.

Strawberry Swirled Mini Ricotta Cheesecakes
These muffin-sized miniature cheesecakes make it clean to pack to work or school for a snack or to share at a party. The paper liner doesn't stick at all once the cake has thoroughly been cooled. Clean and easy to eat, -thumbs up-

Ready to dig into my serving of Strawberry Ricotta Cheesecake
Serving these mini cheesecakes with a generous dollop of the swirling sauce is an easy way to not only use up the leftover sauce, but to strengthen the strawberry flavour. Because, realistically, seven drips of strawberry sauce doesn't stand out much when the cheese flavour is so prominent.

A Blackberry Breakfast of Pancakes and Muffins

Fresh Blackberries

August, the month for blackberries. These delicate, plump berries that resemble raspberries aren't around for long. Their expensive price tag at the supermarket make it a 'once in a while' special treat worth splurging on. The fresh flavours of blackberries + lemon + ricotta create wonderful light summer treats. I have incorporated this combination in two recipes: pancakes and muffins.

Blackberry Lemon Ricotta Pancakes

Last week, I made some Blueberry Lemon Ricotta Pancakes. I loved those light-as-air pancakes so much I had no troubles deciding on what to do with the leftover ricotta cheese. More pancakes! (If you've read my Hawaii post, you may know I have a weakness for pancakes) Blackberries work just as well with lemon and ricotta and best enjoyed in the form of these fluffy pancakes. Using the pancake batter recipe linked above, but just replacing the blueberries with blackberries in the sauce.

Blackberry Lemon Ricotta Muffins

For the sake of trying a new recipes some of the ricotta went towards a batch of muffins. Same three flavours, but in a completely different form.

Peach Mini Galettes and Hand Pies

With one recipe of my Easiest & Fastest Vegan Pie Crust and a ripe peach, I set off to create these mini pastries.

Painting egg wash on pastry to give it shine

The Basic Peach Filling is naturally sweetened with honey making it a very healthy option to fill pastries. The combination of honey and cinnamon is absolutely divine; I couldn't stop sniffing this mixture as I was mixing it together.

Peach mini Galettes and Hand Pies
I was blown away when I took a bite of these tarts. To begin, the crust is so flaky and crisp. Go read my Vegan Pie Crust recipe and try making pie crust with a food processor, it's the fastest and most fail-proof way to make a perfect pie crust. First, I took a bite of the Peach Ricotta Mini Galette. The creamy cheese and fresh peach tasted indulgent. My mom said this variation was most impressive. Second was the Peach Melba (peach + raspberry). This variation is most tart tasting because raspberries are naturally sour. Presentation-wise Peach Melba looks the most appealing; the bright red and yellow are eye catching. For even prettier presentation, add a sprig of mint! Peach Melba would be best when you're craving a really vibrant flavoured dessert or snack. Surprisingly, my favourite of the three flavour variations is the Peach Basil filling. Although it's a common combination seen on the internet, I was a bit skeptical as to how good it could taste. But it was love at first bite. Both flavours clearly fuse together; it wasn't as simple as mixing peach + basil. It's a refreshing burst of fresh flavour and totally unexpected. Fruit and basil is a must-try pairing!

Making Peach Ricotta Mini Galette
These adorable little rustic pastries would be perfect to bring to parties or give away as gifts! They have the the look, smell, and taste needed to impress other peoples' palates. It's also a great way to incorporate summer peaches while they are still in season. I'll will be making many more of these mini pies in the future! Savoury fillings would work beautifully as well, butternut squash or mushrooms in the autumn...yum~

Blueberry Lemon Ricotta Pancakes with Simple Blueberry Sauce

These will be the fluffiest pancakes you will ever put into your mouth. They are cloud-like and will take you on a field trip to heaven. Really.

Blueberry Lemon Ricotta Pancakes with Blueberry Sauce

My family has been consuming blueberries at record amounts; the 40lbs we picked at Krause Berry Farms just a week ago has pretty much been consumed as is. Being a cook, I wanted to make something with fresh blueberries, as it is very rare I have them at hand to use in a recipe. Frozen berries turn my baking into disasters...it's very unfortunate. So I saved a small box of blueberries to create something magnificent. And I managed to reach my goal.

Time to take a bite of Blueberry Lemon Ricotta Pancakes smothered with Blueberry Sauce

I remember Peanut Crumpet telling me about her mom's uber fluffy ricotta pancakes. With that inspiration in mind, I searched the Internet for a blueberry version. Blueberry + lemon + ricotta appealed to me the most; the light and fresh flavours were perfect for a summer brunch. My mouth started salivating as I scrolled through all the photos, I was so eager to make them!

Admire the fluffiness of these Blueberry Lemon Ricotta Pancakes
